Australian Wagyu Picanha (Rump Cap) – 6–7 BMS
Our Australian Wagyu Picanha, also known as Rump Cap, combines one of the most flavorful cuts of beef with the extraordinary richness and marbling of Australian Wagyu.
With a Beef Marbling Score (BMS) of 6–7, this picanha features beautiful intramuscular marbling beneath its signature fat cap. As the beef cooks, that combination creates an incredibly rich texture and deep beef flavor.
When we cooked and tasted this Wagyu picanha ourselves, what stood out most was its texture. It was exceptionally tender, creamy and almost buttery, with a soft, velvety mouthfeel that seemed to dissolve as you ate it.
Each picanha is approximately 5 lbs, making it an impressive whole cut for entertaining or an excellent choice for portioning into individual steaks.
What Makes Picanha Special
Picanha is prized for its distinctive fat cap, which should be left intact during cooking. As the fat renders, it adds tremendous flavor and richness to the beef beneath it.
Australian Wagyu takes that experience even further. In addition to the exterior fat cap, the 6–7 BMS beef contains substantial marbling throughout the meat itself.
The result is a steak with two different sources of richness: Wagyu marbling within the beef and the slowly rendered picanha fat cap above it.
How We Cooked It
For our own tasting, we prepared the picanha simply and let the Wagyu speak for itself.
We first scored the fat cap, being careful not to cut deeply into the meat. We then seasoned the fat cap with coarse salt, portioned the picanha into thick steaks and double-skewered each steak. Using two skewers helps hold the steaks securely and makes them easier to control and turn over the grill.
Grill the picanha with the fat cap intact, allowing the fat to render and baste the beef as it cooks. Because Wagyu contains significantly more fat than conventional beef, watch carefully for flare-ups and move the steaks away from intense direct flame when necessary.
Recommended Cooking Temperatures
We recommend using an instant-read meat thermometer rather than relying strictly on cooking time.
For this highly marbled Wagyu picanha, our preferred doneness is medium-rare:

Rare: Remove at approximately 115–120°F

Medium-Rare: Remove at approximately 120–125°F

Medium: Remove at approximately 130–135°F
After removing the picanha from the grill, allow it to rest for approximately 5 minutes before slicing. The internal temperature will continue to rise slightly as it rests.
For the rich, creamy and velvety texture we experienced during our tasting, we recommend medium-rare and would avoid overcooking this cut.
For food-safety guidance, the USDA recommends cooking whole cuts of beef to an internal temperature of 145°F followed by at least a 3-minute rest.
Serving Recommendation
Slice the cooked picanha across the grain and serve in smaller slices.
This is an exceptionally rich cut. You don't need an enormous steak to appreciate it—the combination of Wagyu marbling and rendered fat cap makes even a few slices remarkably satisfying.
We recommend keeping the preparation simple. Sea salt is enough. The creamy texture, rich beef flavor and natural Wagyu marbling should remain the focus.

- We ship using FedEx Priority with a 1-2 day transit time to deliver your seafood order. A signature is not required, unless delivered to an apartment or business.
- We use the shipping address that you provide us. Minor details can be the cause of major stress. Please take a moment to validate that the information you provided is correct (i.e. spelling, unit number, zip code, state, etc.). Great Alaska Seafood will not be held liable for misrouted packages resulting from incorrect shipping information provided by you.
- We ship Monday - Wednesday. We ship Thursdays depending on your location.
- We DO NOT ship out on holidays or if your delivery date falls on a holiday.
- When you order any Gift Pack or any of our Specials, or if your order is 8 pounds or more you will receive FREE SHIPPING.
- All orders received Monday - Tuesday before 12:00 pm (Alaska Time) will ship the next business day. - There is no "guaranteed delivery time." FedEx provides a courtesy estimated delivery time with your tracking number. But do not be alarmed if your package arrives later in the day or the next day. Depending on your location, or during busy holiday seasons, your package can arrive later in the day or the next day. If shipping to a business, please make arrangements if it is closed during lunch hours.
- We ship everywhere in the USA and Canada. Hawaii requires an additional $45.00 delivery charge. To place a Canadian order, please contact our customer service office
- We do not suggest shipping to a business address unless it is open until 8pm your local time and on Saturdays. FedEx can deliver packages as late as 8pm and if there is a delay they can deliver on Saturdays as well.
- Unlike a lot of seafood companies, we are actually located in ALASKA and therefore are subject to extreme weather conditions. During colder seasons, please be mindful of this. In most cases, your package will arrive in perfect condition. However, if your package is held up along the way due to foul weather conditions, neither we nor FedEx will be held liable.
- Special Events: When planning your special event, waiting until the last minute is not a good plan. Place your order early and we will arrange specific delivery dates. We can make suggestions for your important event based on the best seasonal selections available.
- Holidays: We understand that the season of giving is often a busy and challenging time. Because you are selecting perishable seafood for your celebration or as a gift, we urge you to notify your recipient and confirm they will be home during the expected delivery time. It can still be an item of surprise, but because a signature is not required (in most cases), some people are not looking for their surprise package and will let the box sit outside for an extended amount of time, leaving the items to thaw and spoil. In this event we will not be held liable for spoiled packages

- We offer shipping insurance which covers your shipping cost for a reshipment of your exact same order if ALL of the following occurs: Your package is delayed a day or more AND the products are spoiled. (products are expected to arrive anywhere from frozen to an unfrozen "cool to the touch" state.) We must have a picture of the box, picture of the fedex label on the box and a picture of all the products that are spoiled in order to provide a complimentary reshipment of your products and for your shipping insurance to take effect.
