Geoduck Fritters

Surprisingly light fritters with lots of good clam flavor. Makes 4 Servings.

(Adapted from a food.com recipe.)
Ingredients:
  • 1 package of Geoduck Clam necks and body (Clean and Dice to prep for cooking.)
  • 1 1/3 cup flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup clam juice
  • 2 eggs (beaten)
  • 1/2 cup milk
  • 2 teaspoons butter, melted
  • vegetable oil (for frying)
  • lemon wedge (to garnish)

Preparation
  1. Preheat oven to 200 degrees. Line a baking dish with paper towels and set aside.
  2. Sift the flour, baking powder, salt, and pepper into a mixing bowl. Add the clam juice, eggs, and milk and beat thoroughly with a wire wisk. Fold in the butter and geoduck.
  3. Fill a large saucepan or wok halfway with vegetable oil and heat to 375 degrees. Very carefully, drop large spoonfuls of batter into the hot oil and cook 3 to 4 minutes, turning once, or until the fritters are golden brown on both sides. Drain on paper towels, then transfer the fritters to the prepared baking sheet and place in the oven to keep warm.
  4. To serve, divide the fritters among individual plates and serve immediately.
