Wahoo (Ono) Fillets When cooked, Wahoo has a mild, sweet-tasting flavor with a firm texture. The fish is snow-white in color with a circular flake. Wahoo can be used in any recipe that calls for Ahi, Chilean Seabass, or Snapper.

Wahoo fillets are skinless, and weigh between 8 to 12 ounces each.
